Chicken and Potatoes
I made this today because I was feeling a little behind. Nothing much had happened. One of those days. Errands took longer than expected, the house was messier longer than I wanted it to be, and dinner time came around quicker than I thought.
I opened the fridge and stared at it like it would tell me something useful. Chicken breasts on the shelf. In the pantry, there was a bag of baby potatoes. I had ranch seasoning and butter as well. That’s when I gave up on being creative and just decided to get dinner on the table.
I threw everything in the slow cooker and walked away. A few hours later I walked back into the kitchen and smelled it first. The room smelled like warm chicken, buttery potatoes, and that familiar ranch seasoning. Dinner took care of itself, I felt like. I took care of everything else.
That’s the kind of cooking I rely on most days. When I lifted the lid, the chicken looked so tender I could pull it apart with a fork. The potatoes soaked up the butter and seasoning, becoming soft and flavorful. Never felt complicated but everything felt satisfying.
I sat down to a plate and discovered I didn’t miss a fancy thing at all. Real food that really worked. I make this now when I need something easy, but still tastes like a full meal. It’s not a lot of work, but it gets everyone at the table with no complaints. And, really, that’s plenty often.
