Easy Vegetable Beef Soup
A hearty, comforting soup packed with tender beef and wholesome vegetables β perfect for busy weeknights or cozy weekends.

1 lb ground beef (or stew meat, cubed)
1 small onion, diced
2 cloves garlic, minced
3 carrots, sliced
2 celery stalks, chopped
2 medium potatoes, diced
1 cup green beans (fresh or frozen)
1 cup corn (fresh, frozen, or canned)
1 can (14.5 oz) diced tomatoes
4 cups beef broth
1 cup water
1 teaspoon dried basil
1 teaspoon dried oregano
1 bay leaf
Salt and black pepper to taste

Brown the beef:
In a large pot over medium heat, cook the ground beef and onion until the beef is browned. Drain excess grease if needed. Add garlic and cook 1 more minute.
Add vegetables:
Stir in carrots, celery, and potatoes.
Add liquids & seasoning:
Pour in diced tomatoes (with juice), beef broth, and water. Add basil, oregano, bay leaf, salt, and pepper.
Simmer:
Bring to a boil, then reduce heat and simmer for 20β25 minutes.
Finish:
Add green beans and corn. Simmer another 10β15 minutes, until vegetables are tender.
Serve:
Remove bay leaf and serve hot with crusty bread or crackers.

Β½ cup barley or small pasta
1 tablespoon Worcestershire sauce
A handful of fresh parsley before serving
A dash of hot sauce for heat
